Herein, we report an efficient protocol for the synthesis of spiro-imidazolidinone-cyclohexadienones from p-quinone methides (p-QMs) and dialkyloxy ureas under mild conditions. The strategy follows a two-step process involving an initial vinylogous conjugate addition of urea derivatives to p-QMs, followed by oxidative dearomative cyclization of open-chain product to the projected spiro-imidazolidinones. This protocol exhibits good functional group tolerance and provides a straightforward method to access spiro-imidazolidinone-cyclohexadienones. In follow-up chemistry, we have shown the debenzylation of spiroimidazolidinones to give N-hydroxycyclic ureas.

Wheat bran, which contains a large amount of cellulose, is used as a raw material to produce soy sauce, but it is hard to degrade during fermentation. Steam explosion (SE) is efficient in hydrolyzing the cellulose for enhancing enzymatic digestion and solvent accessibility. In this study, we applied a SE at a sufficiently high pressure to damage the integrity of the wheat bran structure and modify it to assume a layered form. We found that cellulose, hemicellulose, and lignin structures were collapsed by SE pretreatment, which was indicated by their changes in Fourier transform infrared spectroscopy (FTIR). The amounts of cellulose, hemicellulose, and lignin decreased by 5.8%, 21.4%, and 43.4%, respectively, under 1.5 MPa, resulting in the significant reduction of sugar and amino acid nitrogen. The co-reaction of nonenzymatic browning after SE pretreatment resulted in an intense increase in flavor (overall feeling), as determined by electronic nose analysis and sensory evaluation. In conclusion, SE pretreatment under 1.0 MPa was proven to be the most optimal state for the production of aroma compounds (volatile compounds), which are essential for soy sauce production.

Aurone-derived azadienes are well-known four-atom synthons for direct [4 + n] cycloadditions owing to their s-cis conformation as well as the thermodynamically favored aromatization nature of these processes. However, distinct from this common reactivity, herein we report an unusual formal migrative annulation with siloxy alkynes initiated by [2 + 2] cycloaddition. Unexpectedly, this process generates benzofuran-fused nitrogen heterocyclic products with formal substituent migration. This observation is rationalized by less common [2 + 2] cycloaddition followed by 4 pi and 6 pi electrocyclic events. DFT calculations provided support to the proposed mechanism.

Cocoa fermentation is an essential step for chocolate production whereby flavor potential is generated and bitterness and astringency are moderated. To facilitate fermentation research in laboratories geographically distant from cocoa-growing regions, and to simplify and control the fermentation system, a laboratory fermentation model system was developed. The model system consisted of dried unfermented beans, artificial pulp medium, and laboratory incubator to control temperature and aeration. The model system developed in this study showed a succession of key microorganisms including Saccharomyces cerevisiae, Lactobacillus plantarum, Lactobacillus fermentum, Acetobacter pasteurianus, and Acetobacter tropicalis. The pH of cocoa beans decreased to an acceptable final pH (4.8). Sugars were well consumed and acetic acid and ethanol were produced during fermentation. Desirable volatile compounds including phenylethyl alcohol, acetoin, 2-phenylethyl acetate, and 3-methylbutyl acetate increased in the cocoa beans during fermentation. In addition, the concentration of polyphenols decreased with fermentation. These results lead to the conclusion that the model system developed in this study was able to simulate the microbial and chemical changes occurring in in situ cocoa fermentation. This laboratory-scale model system will enable systematic examination of the effects of process parameters on fermented bean quality.

Isomerization-based strategies to enable the stereodivergent construction of complex polyenes from geometrically defined alkene linchpins remain conspicuously underdeveloped.
